Since coming to Montreal and opening Citrus in 1989, how have you seen the city’s culinary scene change and evolve?
That was totally another era. Back then, most of what was considered gastronomic was simply classic French cuisine. There was no product diversity due to the lack of cooperation with producers. Most of what was cooked was frozen and/or imported. Twenty years ago, we began a small revolution by creating a network between chefs and producers to promote a “food craft industry” from Land to Table.
How would you characterize Montreal’s culinary scene today?
More dynamic than ever. Thanks to the vibrant cosmopolitan cultural blend, the food is very diversified and eclectic, while at the same time, very authentic. Most young chefs today are creating a local cuisine with local ingredients. They understand how important it is to support local producers and to promote their craft. The new generation wants to express their food identity and show their vision of what Montreal’s gastronomy is about. We take pride in showcasing the great Northeast coast in our dishes, with a pinch of winter and a French twist that makes us special, of course.
What are some of the key ingredients that make Montreal such an influential culinary destination?
What makes Montreal special to me is that mix between European and North American culture. We really kept and maintained the Latin/French influence that makes us enjoy a certain “art de vivre.” People here enjoy and truly savor the good life and good food as well.
What can groups expect from their dining experience at Toque! and Brasserie T!
Both restaurants share the same philosophy—quality and traceability of products. Brasserie T! is more casual and offers creative bistro food in a lively ambience, while Toque! is definitely a special treat with our very popular tasting menu that takes our guests through a world of discoveries with seasonal and the freshest products. The whole dining process becomes a true gastronomic experience.
