Q&A with James Dumas, High West Distillery & Saloon, Park City

James Dumas
Executive Chef and General Manager
High West Distillery & Saloon
Park City

Why is living and working in Park City a great experience nowadays?
Living and working in Park City is wonderful; it’s like being on vacation every day! That’s why so many people come for a visit and decide to never leave.

Tell us a little about High West Distillery & Saloon.
High West Distillery & Saloon is located just one block over from Main Street in historic Old Town, Park City. Our Park City home is listed on the National Register of Historic Places and both buildings are important examples of Park City’s early architecture during the mining period.

The house side was built in 1914, as one of only a few two-story Victorian-style pyramid houses in Park City. The garage side was originally a livery stable. During renovation, we found a horseshoe that has now become our logo.

High West offers tours daily of our beautifully renovated home that include insight into our boutique distillery where we craft small batch spirits. Not only does High West produce and sell award-winning whiskey and vodka on-premise, but we also have an award-winning restaurant that serves contemporary Western fare seven days a week for lunch and dinner.

High West is group-friendly, with several dining options available for small parties or large events.

What are some top experiences you would suggest while meeting in Park City?
The trails! Park City offers world-class outdoor adventures. High West is located at the bottom of Quittin’ Time ski run, and the trails surrounding High West and Park City offer some of the best biking, hiking and snowshoeing in the world. No matter the season, there is always a reason to get outside. I also always tell friends about the Sunday patio barbecue at the St. Regis, which is phenomenal.
