Q&A with Tory Miller, Executive Chef, L’Etoile and Graze

Tory Miller, James Beard Foundation’s 2012 award recipient for Best Chef-Midwest and executive chef at Madison’s L’Etoile and Graze, is fulfilling his dream of taking local farm-raised ingredients to the next level. Preferring Old World cooking methods, his kitchens produce a variety of house-made products, including artisan-cured meats, pastas, fruit preserves and pickled vegetables.

What are your favorite things about living and working in Madison?
Everything in Madison is driven by the Dane County Farmers Market. If it were not for the market, I wouldn’t have stayed here 12 years ago. It’s not just the food, but the farmers themselves that keep me around.

What is your idea of the perfect day in Madison?
Wake up and go to the farmers market, get squeaky cheese curds and visit one of our many local establishments for delicious Bloody Marys, followed by brunch. In the afternoon, visit one of the local cheese makers for a tour or a specialty shop like Fromagination or Babcock Hall Dairy Store. Grab some noodle bowls at Sujeo for dinner, followed by some beer and local music at the Union Terrace. It’s hard to really describe a perfect day because there’s a lot to offer in Madison. Grab a bike and ride around, visit the zoo or botanical gardens, see a free art show on the UW campus.

How would you describe the current culinary scene in Madison, and what makes it a great foodie destination?
Madison is definitely a foodie destination because there are things happening here that are not happening anywhere else—real farm-to-table dining, amazing craft cocktails, great wine programs—but it’s all a secret. People don’t realize that the food is incredible but affordable.

What are some great culinary experiences in Madison you would recommend for groups?
Sujeo is great for experiencing lots of items by sharing everything as a table, whether it’s through dim sum or hot pots. Graze can accommodate large parties and provide those comfort food items that everyone loves. L’Etoile does a lot of group events and can offer unique menus and pairings for those that want a truly special experience.
