What is your culinary background?
I went to college for business management, but it was food that piqued my curiosity and passion. I enrolled in the Pennsylvania Culinary Institute, advanced through several chef positions, and became a chef instructor at the New England Culinary Institute, then located at The Essex Resort & Spa. Following that experience, I owned and managed a restaurant in Jeffersonville, Vermont, before returning to The Essex and working my way to my current position as Director of Culinary Operations.
Describe the F&B programs at The Essex.
The Essex Resort & Spa has two restaurants open daily: signature restaurant Junction and local favorite The Tavern. We also offer the Cook Academy, where guests can hone their culinary skills and master new techniques alongside the resort’s talented roster of chefs, plus a bakeshop and an off-site catering program. Each of these culinary outlets has a fantastic team of professionals, including the meetings and banquet staff who never miss a detail.
How would you characterize Vermont’s strengths and appeal as a culinary destination?
Vermont continues to be at the forefront of food and its path to our plate. Whether it’s fighting chemical giant Monsanto against GMO foods or having more farmers markets per capita than any other state, Vermonters care about their food, where it’s from, how it’s been processed, and how it is prepared. That passion is reflected in the foods raised and shared at The Essex.
What local farm or producers would you recommend for groups?
The Essex is surrounded by many great local farms and producers that guests can visit based on the season. I particularly like going to local apple orchards in the fall—the taste of a just-picked apple can’t be beat! With fantastic gardens and plenty of outdoor space to explore, Shelburne Farms should not be missed in the summer and a Vermont beer-tasting adventure is a treat any time of year. The Essex offers Vermont Guided Tours from local Greg Doremus, making it easy for guests to get out and explore the surrounding Burlington area.
