This is your first restaurant outside of San Antonio and Texas. Why did you choose Las Vegas?
Early in my career, I was part of the original opening team at the Mirage Hotel and Casino. With many of the greatest names in the restaurant business now represented in Las Vegas, I saw a natural opportunity to bring my flagship brand here—we are in great company.

How is culinary Las Vegas similar to San Antonio, and how is it different?
Having lived in Vegas over 20 years ago, it’s great to see how it’s evolved from a mostly gambling destination to a city of great hospitality. While Vegas may not have San Antonio’s rich history, the city has certainly opened its arms to the world of food, and I’m excited to share the flavors of Mexico and San Antonio with a global audience.
