From the Editor: Food for Thought (May 2016)

The history of a destination almost always provides the most accurate window into its present, as does its culinary culture. If you mix together those two factors you’ll inevitably come up with a winning recipe for your attendees.

Our cover story this issue, “A Taste of History,” provides a palate-pleasing “entree” into some of the defining culinary creations handed down through the generations in top historic destinations. From Mayan-inspired masterpieces and a couple of Culinary Institute of America chefs making San Antonio sizzle—even at the Henry B. Gonzalez Convention Center—to the “Revolutionary” fare of Philly and Old West-style grub in iconic destinations such as Deadwood, Tombstone and Cheyenne, attendee plates serve as a portal to the past. One of my favorite references is to the reportedly haunted Stanley Hotel in Estes Park, Colo., which can cook up an event straight out of that creepy Stephen King book and movie The Shining. If you see a set of ghostly twins down a long corridor, or heaven forbid you hear “Danny doesn’t live here anymore,” run!
