Hyatt Regency Waikiki Beach Resort and Spa announced the appointment of Joseph Rose as chef de cuisine at the resort’s Japengo restaurant.
With over ten years of experience in the hospitality industry, Rose joins the resort from The Gwen hotel in Chicago, where he served as executive chef. Rose brings to Japengo a wealth of culinary expertise and a passion for global cuisines. He honed his skills at a variety of Chicago’s esteemed hotel kitchens, including at Sixteen, where he was running day-to-day operations when the restaurant received its first Michelin star in 2011.

A Chicago native, Rose began his culinary career as chef de cuisine for Westin Hotel & Resorts, developing menus and training culinary staff at Chicago’s Ember Grille. After serving as executive sous chef for West Paces Hotel Group, Rose joined the pre-opening management team as chef de cuisine for Sixteen at Trump International Hotel & Tower Chicago, leading the restaurant to its first Michelin star in 2011. Other notable achievements include serving as chef de cuisine for Jean-Georges Vongerichten’s The Pump Room at Public Chicago, serving as executive chef for the AAA Four Diamond-awarded Lockwood Restaurant and Bar at the Palmer House Hilton, and helping create a new restaurant concept at the luxury Arista hotel in Naperville, Ill.
