The Canopy by Hilton Chicago Central Loop, known for its landmark status as the former headquarters of the Chicago and North Western Railway, recently opened a new Mediterranean rooftop restaurant.
Seville, which has already made a splash in Chicago, is a dining concept created in partnership with Fabio Viviani Hospitality, helmed by celebrity chef and Top Chef alum Fabio Viviani. The intimate restaurant and craft cocktail bar serves Mediterranean coastal dishes and signature favorites created by Chef Viviani himself.
Seville’s menu will change with the seasons, but the rich flavors and fresh ingredients of the regions touched by the Mediterranean Sea will be celebrated year-round. The menu is designed to be shared, giving guests the opportunity to enjoy delicious food, stunning city views and each other’s company in a relaxed atmosphere.
The restaurant also boasts an extensive Mediterranean and American wine program, created by top sommelier Fabrizio Di Rienzo.
Seville is located on the 16th floor of the Canopy by Hilton Central Loop and is a 5,900-square-foot windowed dining room with an expansive 1,700-square-foot outdoor bar and lounge area. The restaurant is available for semi-private and buyout events upon request.

Following a $90 million restoration that took almost a decade’s-worth of careful planning, the historic Hotel Cleveland, Autograph Collection has completed its monumental renovation in downtown Cleveland and celebrated its grand reopening earlier this month.
The project not only restored Hotel Cleveland to its former glory but also moves the iconic property into the future with contemporary refinements, like a property-wide new interior design that reflects the city’s steel-clad resolve, its warmth and community, and its present-day charisma.
The 491-room hotel includes 50 suites and features a sophisticated new lobby with carefully retained historic elements. Hotel Cleveland also features 59,000 square feet of meeting space across 30 distinctive spaces and three ballrooms, including the largest Marriott ballroom in Ohio at 22,590 square feet.
Renovations also introduced two new restaurants that “fully embrace the Cleveland spirit,” including Maker, “destined to quickly become the city’s hottest spot for lunch, happy hours or dinner” and featuring views of Public Square, leather seating, lamps shaded with vintage Cuyahoga riverfront images and a backbar complete with a massive green crystal chandelier.
Hotel Cleveland’s second new restaurant, Mowrey’s, gives a nod to the site’s original 1800s tavern, which will offer a la carte American-style breakfast favorites with special Cleveland twists. Mowrey’s will also be available for “tucked-away” private dining experiences.
Hotel Cleveland has hosted some of the world’s most prominent travelers, from presidents and royalty to rockstars and sports legends. Visitors include luminaries like Martin Luther King Jr., Duke Ellington, Charles Lindbergh, Harry Truman and Eleanor Roosevelt. When The Beatles stayed at Hotel Cleveland in 1964, police were called to handle mobs of fans surrounding the hotel.
One finishing touch of Hotel Cleveland’s renovation uses the latest near field communication (NFC) code medallion technology to allow guests to stand before historic imagery and be transported to the city’s—and the nation’s—most important moments.
