Last year, the big news at the AAA Four Diamond Caribe Royale Orlando was the $140 million investment on a total resort reimagining. All 1,217 one-bedroom suites were renovated “down to the studs” as well as the 120 spacious two-bedroom villas featuring full kitchens, dining areas and other amenities. All 58 breakout rooms and two dedicated boardrooms, totaling more than 240,000 square feet of event and meeting space, were also refreshed, including the 50,000 square foot Palms Ballroom with its expansive pre-function area, sunlit atrium with built-in registration and dedicated boardroom.
Today Caribe Royale is encouraging groups to leave tried, true and traditional behind with the introduction of all-new event spaces. The Grove, a new 20,000 square foot event lawn, is an exceptionally beautiful space for outdoor events. The resort recently broke ground on an exciting 20,000 square foot space to expand their convention center, including a new ballroom and breakout rooms. The new space, which will further inspire groups to embrace creative meeting concepts and color outside the lines, is expected to open in early 2026.
Eight dining establishments grace the resort, with the most well-known, Venetian Chop House, beloved by meeting attendees and locals alike. An elegant eatery with indoor and outdoor seating, this AAA Four Diamond-rated restaurant celebrates elevated Italian cuisine. Signature steaks and classic Italian dishes are paired with top wines from all over the world.
Other onsite eateries include Calypso’s Pool Bar & Grill, Tropicale for an expansive breakfast buffet, Rum Bar featuring Bacardi Rum for creative cocktails and snacks, Starbucks, and a convenient grab-and-go Market for pizzas, salads, sandwiches, coffee, freshly baked pastries and local treats from Kelly’s Homemade Ice Cream.
The addition of Stadium Club, an interactive and immersive sports bar and entertainment experience, has been a boon to visiting meeting groups that want to unwind after a long day of business meetings. Stadium Club features eight pro-level sports simulators, 360-degree game-time viewing for pro football watch parties and a chef driven menu with such delights as chicken and waffles, gourmet charcuterie boards, juicy grass-fed burgers, antibiotic free hot dogs and smoked fish dip. Stadium Club, which was just named official partner of NBA’s Orlando Magic, can accommodate groups from 6-500.
If guests would rather participate than spectate, the hotel offers Padel Tennis and Pickleball on the state-of-the-art Sport Court. Groups can also opt to take a stroll or run on the 1.5-mile jogging trail or try fly fishing at Boca Pier.
Creative Cuisine
Executive Chef David Hackett is all about thinking out of the box when it comes to the resort’s cuisine—especially the banquet menus. He says working for an independent hotel allows for him and his cadre of chefs to express themselves without corporate guidelines most hotel chefs at big chains are used to.
From sourcing their meats from independent ranchers to meet the demand for higher quality products, to catering to special requests like themed menus or customized cocktails, the culinary team at Caribe Royale Orlando celebrates the individuality of its groups at every touchpoint.
The hotel gets more special requests from meeting groups that ever before, says Hackett, and going above and beyond for them is a lot of fun for his chefs. “We love a good Challenge.”
