ORLANDO
Margaritaville Holdings LLC, hired Carlo Sernaglia as its new concept chef. Sernaglia will oversee all corporate food and beverage initiatives and developments, working closely with the company’s licensees to ensure brand standards are met and developing concepts with the Margaritaville executive team.

Prior to joining Margaritaville, Sernaglia spent several years in a consulting position for the company, working alongside the leadership team to develop and launch new concepts like JWB Prime Steak and Seafood, which is accessible to Margaritaville Hollywood Beach Resort guests. JWB offers intimate spaces ideal for small group gatherings.
Previously, Sernaglia served as restaurant chef for the new signature restaurant concept, Cioppino, at the Ritz-Carlton Key Biscayne in Miami, Fla. With extensive background in new restaurant openings, he has successfully overseen the operations and menu development for Altamar in Miami, as well as his own concept, Vagabondi. Much of his success has been attributed to his international culinary education in Italy and Venezuela.
