The Bowery Hotel announced that Chef Carlo Bigi will lead the culinary charge at Gemma, the hotel’s Italian Trattoria, as executive chef.
A native of Turin, Italy, Chef Bigi plans to expand the menu with creative Northern Italian dishes and local, seasonal ingredients.
Bigi was inspired to become a chef at an early age after growing up in the kitchen of his family’s restaurant. He has held positions at multiple highly esteemed restaurants worldwide, including Il Buco Alimentari & Vineria, an upscale Mediterranean-Italian restaurant in New York City’s East Village; Casa Lever and Sant Ambroeus Restaurant on Madison Avenue; and a number of Michelin-starred restaurants in Italy and France.
As executive chef of Gemma, Bigi will be responsible for overseeing the concept and design of the menu, hiring and overseeing restaurant staff, managing all on-site catering for private events booked on the Bowery Terrace and in Gemma’s Wine Room, and ensuring that performance in the restaurant is consistent with The Bowery Hotel’s dedication to first-rate service.

The Bowery Hotel offers 135 guest rooms and 10,000 square feet of meeting and event space for up to 600 guests.
